60g cashews
50ml hot water
15g tree spinach (or regular spinach or any other greens)
5g basil
1 tbsp olive oil
1/2 red onion
3 sprigs of chives
1/2 date
1/2 tsp salt
Instructions:
Slice the zucchini into 2 cm thick rounds. Season with salt and pepper.
Slice the tomato into 5 thick rounds and sprinkle with Italian herbs.
Place the zucchini and tomato slices together in a baking dish. Add a small bowl of water to keep the vegetables moist while baking.
Bake everything at 180°C (350°F) for about 20 minutes.
For the Pesto:
Blend all the ingredients except for the spinach and basil in a blender until smooth.
Add the spinach and basil and blend briefly to avoid over-pureeing the fresh herbs.
Finishing Touches:
Top the baked zucchini slices with the pesto and place a tomato slice on top of each.
Spread a bit of tahini on top and sprinkle with nutritional yeast.
Place everything back in the oven for a few minutes until the dish is lightly "gratinated."
