Recipe

Salad Ingredients:

  • 2-3 stalks of celery

  • 1 fennel bulb

  • 1 bunch of radishes

  • 1 apple

Dressing Ingredients:

  • 1 tsp horseradish

  • 2 cloves of garlic

  • Juice of half a lemon

  • 2 tbsp apple cider vinegar

  • 2 tsp honey

  • 4 tbsp coconut milk

  • 80 g cashews

  • 1/2 tsp salt

  • Pepper to taste

Topping:

  • 200 g smoked tofu


Preparation:

  1. Chop the vegetables and apple and place them in a bowl.

  2. For the dressing, blend the horseradish, garlic, lemon juice, apple cider vinegar, honey, coconut milk, cashews, salt, and pepper until smooth and creamy.

  3. Pour the dressing over the salad and mix well.

  4. Cut the smoked tofu into cubes and bake in the oven at 180 degrees Celsius (350 degrees Fahrenheit) for 20 minutes until crispy.

  5. Top the salad with the crispy smoked tofu cubes and enjoy!
